Ridge cucumbers
What's the difference between these and ordinary ones please. i know they look different and I think I remember they are more bitter. If used in pickles do they lose the bitterness?

They are outdoor cucumbers, and the skin can be thick and bitter especially on large ones
Unless small & tender you peel, slice, salt and let them weep before making cucumber salads - like you do with most Mediterranean cucumbers, which tend to be ridge varieties; did you not have them in Majorca?
Nice for a change; I usually taste a slice before deciding what to do
I guess they are used in pickles but I've never done that
