Thank you for the link ..

The last time we had dined at Restaurant Lasarte, in Barcelona, we had filet mignon rubbed with coffee, and here is the recipe:

2 Steaks of choice ( 1 1/ 2 inch thick )

Dry Spice Blend:
2 Tblsps. of finely ground coffee beans
1 tblsp. smoked paprika / pimentón de la vera
1 1/2 tblsp. oregano
1 1/2 tsps. freshly ground black pepper
1 tsp. chili powder or crumble 1 dry red "guindilla" capscium horn shaped chili pepper ( 1 shall do the job )
1 Tsp. coriander
1 tsp. mustard powder
1 tsp salt

Season the 2 steaks with salt if you wish, I use a pinch of sea salt or Himalayan Rose Salt and then dust drege the steaks into the dry spice rub, and place in the refrigerator for 3 hours ..

Then, sear in Evoo, for 2 minutes per side for rare or 5 minutes per side for médium rare ..

Voila ! Outstanding .. :clap :clap

That certainly does sound outstanding, Alexandria! It would go well with the stronger flavour of steak, but probably not with chicken. I hope to try this out very soon.

I have never used a coffee rub with chicken or shellfish or fish, however, from my own experiences, Chefs are veered towards coffee spice rubs with beef and lamb ..

However, highly innvoative and adventurous Michelin Chef Martin Berasategui has done sea scallop dishes with an artichoke sauce with leeks and a few ground coffee beans and it was quite extraordinary .. :clap :clap

Having been in Madrid since Friday, as the 32nd Salon Gourmets, at the Ifema Convention, begins Monday the 7th and ends Saturday the 12th, we shall be spending the week in the Madrid Capital until Sunday mid day the 13th of May ..

Some highly interesting tiny eateries have opened up in the city, and we are catching up with some dear friends ..

A couple of recommendations:

1) The One: Hong Kong Cuisine on Calle Lagasca 81 ..

2) El Mercado de La Paz: Calle Ayala 2 ..

3) Café & Caprichos, Snacks on a Whim: Angélica´s : San Bernardo 24 .. Best time to go is 17.00 - 17.30 for our national Café Hour called a Merienda ..

4) Mythic: The Asia Central - The Palace Hotel .. This is simply amazing ..


Off for a lovely walk over to: Estado Puro, across from the Ritz, and a few metres from the Westin Palace Hotel .. For a wine and some people watching on the lovely open air terrace ..

Enjoy Madrid!

We are going bluebell hunting today. Tricky to know what to put on my feet, as it's warm out.
But undoubtedly soggy.

We'll come back to pork skewers. I'll probably make them into pinchos.



& I've bought chips. French fry ones. I usually only get chips if we are having steak.

I've been making it for over 20 years, Renee, and I've got maybe 25 recipes in my SE Asian cookbooks! It's often spelt "laab".

You should definitely try it Renee!
As Saks says there are as many variations as it's possible to have - all a matter of taste really - I put far more garlic to fry in with the mince than that S/bugs recipe, I also fry off a finely chopped onion first with chopped ginger plus I use chilli powder along with chilli flakes & much more fish sauce & lemon/ lime juice. I use about a tsp sugar - I find palm sugar makes the mix too claggy, then when it's all cooled down & had a chance to marry I add finely chopped spring onions & toasted coconut flakes instead of the rice, along with the coriander, mint etc. & maybe more lime juice to taste.

It's wonderfully salty/spicy/sour with a hint of sweet - perfect for this weather!

You poor thing, Alexandria! :lol: Your temperature or two degrees more would be perfect for me, but today it has been 25C, so I've been in the shade.

Lovely photo Sakks! I definitely will have a go at making larb and will make your version Lush. Is it served at room temperature, or warm?

27C where I am - far, far too hot for me, by at least 10 degrees. I'm afraid my planned meal of chicken with beansprouts will have to wait until it's a bit cooler. Haven't a clue what I'm going to have in its place though.
