It is my all time favourite breakfast.
Me and Tiff regularly have it on a Saturday "brunch time", sometimes accompanied by a nice glass of fizz
We do eggs royale, and eggs benny. For benny I always used some fantastic dry cured, smoked ham that I get from my local farm shop. My eggs royale is made with hot smoked salmon, that I make using my left over sushi salmon. Benny served with a traditional hollandaise, my eggs royale with a Bearnaise.
