Recipes using very tart clementines?
I bought a large box of clementines, all of which are too tart to eat...so presumably they'd be great to cook with. What sort of (vegan or fish) recipes might I use them in? First thoughts are to simply use them instead of lemons, would that generally work?

You could try peeling them then poaching in very sweet syrup perhaps with a cinnamon stick or two. These could then be bottled to use as an instant dessert. Or you can make marmalade.

Well the obvious recipe would be a Clementine Tart.
Fish - wise, I think I might try a firm fish steak (Tuna or Swordfish) with a clementine- based sauce. I sense ginger, fresh chile, coriander leaf. Or a seafood broth with clementine supremes.

I did wonder at the time, if it would work equally as well with lemons?

Oops, sorry, I missed the word 'vegan', so took another look at the recipe after posting & in a very short space of time felt virtuous in that it contained olive oil instead of fat, but then was promptly deflated by the '4 free-range eggs'!! So sorry.

A Spanish Bizcocho ( Almond Flour Tart ) normally uses lemon, or orange zest ..
Then, a tangerine brown sugar syrup drizzled lightly over a slice of the tart ..

Good to start with something simple to see how these tart clems perform.
Thanks for all the other suggestions, I've got most of a 2.3kg box remaining, so there will be further experiments. My only worry is that I'll discover something we love, and then we'll never be able to get these tart jobbies again.

My first thought was ponzu - dressing or dip - subbing the lemon for clementines - which is what I did with sevilles when I had a surfeit - keeps very well in the fridge for a few weeks.

The same thing has happened to me - bought a box of "easy peelers" (and they aren't) which are far too tart. I like the idea of KK's sauce with ginger and chillies. It would probably freeze well too.

It will certainly freeze well.
Plus the ginger and the chiles will improve the flavour with time.

I've had rubbish easypeelers from other supermarkets this year, they just aren't up to scratch

Slightly off topic as neither fish nor vegan, I was intending to do a recipe for duck with clementines and kumquats but haven't seen any kumquats. I imagine it will require a trip to Loon Fung Hong, by which time there might not be be clementines in the shops
