Nigel Slaters Moist Plum Cake
I have just made Nigel Slaters Moist Plum Cake. It is such an easy and delicious cake, I really recommend it.

sorry to lower the tone, but the words Nigel Slater, Moist and plums all in the same sentence make me feel a bit

HH, it think its from "A year in the Kitchen" by Nigel Slater, but I got it from the Guardian

having first seem him make it on some TV programme.
By the way he says it is best on the day it is made, but I like it a day later when some of the juices from the plums have seeped out and it is more moist.

This looks very similar to the recipe for the rhubarb cake which I made yesterday. Can someone tell me - is it meant to be a bit soggy at the bottom??

Yes, in this case soggy bottoms are good.

Funny you should mention that Dover Soul!!! Great minds think alike!! I have just made a really delicious version of this cake using a bottle of Cherries I bought the other day from Lidl, and it was absolutely delicious! I am trying to upload a photo, but haven't done this before! Hope it works, as it really was good!

Raspberries work well too. I made one on Friday, using vanilla instead of almond. Very nice with a vanilla bean ice cream.

Thanks ICC - it was delicious - not much left now! We had it for pudding after roast chicken - served with a little crème fraiche. I made it with rice flour, as I try not to eat wheat, and also used flaked almonds instead of walnuts. I would definitely make it again. It is juicy, and the cherries didn't sink to the bottom! It took a bit longer than 45 mins to cook, but I had made it in a slightly smaller tin than he suggested.
